Brighton conversion kitchens are small, often fitted along one wall of a room that was never a kitchen, and the appliances are usually built in under a worktop with tight tolerances. Extractors matter more here than the hob does. Brighton is the hardest city in the county to work in and the reasons are physical rather than administrative. One waste point worth stating plainly, because it catches people who have moved from the surrounding districts. Brighton and Hove is its own unitary authority. Its household site at Hollingdean serves its residents; the East Sussex County Council sites at Newhaven, Hailsham and elsewhere run a residents-only permit scheme that does not cover a Brighton address.
